Crockpot Pork Tacos on Lettuce
Ingredients:
- 4lbs of pork chops or loin
- 1 Tbsp olive oil
- 1 cup unsalted chicken bone broth
- 1 14.5oz can diced tomatoes - unsalted
- 1 6 oz can tomato paste - unsalted
- 1 lime – zest + juice
- 1 Tbsp Apple Cider Vinegar
- 1 Tbsp chili powder
- 1 tsp cayenne
- 1 head Butter or Romaine lettuce

- onion
Directions:
- Heat a large pan over medium-high heat and add olive oil.
- Sear pork chops in oil about 3-4 minutes per side.
- Place pork chops in the bottom of Crockpot and add all other ingredients except lettuce.
- Cook for 8 hours on low, pull the pork apart, and scoop into sturdy lettuce pieces.
